Shells and cheese and MORE!


So, you like Mac and cheese? Of coarse you do, everyone does. Well I like it and all, but you know me, nothing is good enough.

Bare in mind, I make large portions. I'll eat on this for 2 or 3 days, and probably share a bowl or two. So here's the starting off stuff:
1 lb medium macaroni shells,
1 lb ground beef,
5 small red potatoes,
2 cans of Bush's chili beans,
1 can of sliced jalapenos,
1/2 log of eazy melting white cheese

Start the potatoes cooking early... those damn things cook slow. So either get them in the oven about an hour in advance, or microwave for about 25 minuets. Next get some water boiling, and add a good pinch of salt for the shells. Brown the ground beef, and preferably something a bit fatty. I used 76/24. You'll want that nice greasy fat. When the beef is just about done, season to flavor. You know me, I used Lawery's seasoning, seasoning salt, and Tiger sauce. Add the can(s) of chili beans, jalapenos, and about 1/4 of the total cheese. Turn down the heat, and stir. Keep cooking on low setting while the shells cook.

Don't fully cook the mac shells all the way. I stopped early on accident, and it worked out great. You don't want them raw or anything, but about 85% cook, the shells had a great texture for the meal. Anyway, finish them cooking, strain off the water, and pour mix the shells, meat and stuff, and the rest of the cheese.

Take the now cooked potatoes, cut into bite size pieces, and add to the mix. Mix it all up good, and you've got yourself Shells and cheese and MORE!
